Grilled Pineapple with Mascarpone Whipped Cream Recipe

Ingredients

  • 8 ounces Mascarpone
  • 1 cup Heavy Cream
  • 1/4 cup Powdered Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 8 slices Pineapple, About 1 small pineapple
  • 3 tablespoons Packed Brown Sugar
  • 1/4 teaspoon Cinnamon
  • 1 loaf Pound Cake, Sliced, optional

Directions

  1. In a large bowl, combine the mascarpone, cream, powdered sugar, and vanilla. Beat until medium peaks form. Cover and chill.
  2. In a resealable bag, add the pineapple, brown sugar, and cinnamon. Massage gently to combine. Set aside to let the juices form, about 5 minutes.
  3. Preheat grill to medium-high heat. Remove pineapple from bag and save juice. Grill pineapple for 2-3 minutes per side. Serve over slices of pound cake, top with mascarpone whipped cream and drizzle with reserved pineapple juice.
