Grilled Meatballs Recipe

Ingredients

stuffed meatballs:
  • 1 pound Lean Ground Beef
  • 1 Egg
  • 1/4 cup Breadcrumbs
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Red Chili Powder
  • 1/4 medium Red Onion, diced very finely
  • 1-2 cloves Garlic, minced
  • 1 cup Monterrey Jack Cheese, coarsely shredded
skewers:
  • 1 Zucchini Squash, cut into 1.5" cubes
  • 1-2 Red Bell Peppers, cut into 1" pieces
  • 1-2 Yellow Bell Peppers, cut into 1" pieces
  • 1 Red Onion, cut into 1" pieces
herb mixture:
  • 4 tablespoons Canola Oil
  • 1/2 tablespoon Italian Seasoning
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Directions

  1. In a medium bowl, combine all of the ingredients for the Meatballs except for the cheese.  Mix until well combined.  Separate into 9 meatballs of approximately even weight.  (This is very important so that the meatballs all cook in the same time on the grill.)
  2. Working with 1 meatball at a time, flatten it out into a large disc.  Add a small amount of shredded cheese to the center of the disc.  Carefully roll the sides up until the disc is again shaped like a round meatball.
  3. Thread meatballs, zucchini, peppers, and onions onto 6 skewers.
  4. Meanwhile, combine the ingredients for the Herb Mixture in a small bowl.  Mix until well combined.
  5. Place kabobs on grill, and brush the veggies with approximately half of the Herb Mixture.  Grill over medium-high heat for 5-6 minutes. 
  6. Rotate kabobs, and brush the veggies with remaining Herb Mixture.  Continue grilling for another 5-6 minutes, or until meatballs are done. 

Notes

Food Safety Tip: Ground beef should be cooked to an internal temperature of 160°F degrees.
