Gluten Free Tomato Bruschetta Recipe

  • 2 cloves Garlic, Minced
  • 2 tablespoons Extra Virgin Olive Oil
  • 3 cups Cherry Tomatoes
  • 1/4 cup Fresh Basil, Chopped or chiffonade
  • 1 tablespoon Balsamic Vinegar

  1. Add the olive oil and garlic to a small saucepan and heat over medium heat until the garlic is golden, about 3 minutes. Remove from heat and let cool while preparing the tomatoes.
  2. Quarter the cherry tomatoes or cut them a bit smaller if they’re on the larger size.
  3. Add the cherry tomatoes, chopped basil, balsamic vinegar and the garlic/olive oil to a medium sized bowl and stir to combine.
  4. Serve immediately or let it sit at room temperature for up to an hour before serving.
