Gluten Free Teriyaki Meatloaf Recipe

Ingredients

  • 1 cup Gluten Free Breadcrumbs
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Ground Ginger
  • 2 pounds Ground Beef
  • 1/3 cup Gluten Free Teriyaki Sauce, Plus additional for glaze
  • 1/4 cup Milk of Choice
  • 2 Eggs

Directions

  1. Preheat oven to 375°F. Line a baking sheet with aluminum foil.
  2. In a large bowl mix the gluten free bread crumbs, onion powder, garlic powder, and ginger until combined.
  3. Add the ground beef, gluten free teriyaki sauce, milk, and eggs. Gently mix until combined.
  4. Divide the mixture in half and form it into 2 loaves (each approximate the size of your hand) on the baking sheet.
  5. Brush the meatloaf with the additional gluten free teriyaki, and bake for 30-40 minutes or until the meatloaf reaches an internal temperature of 155°F. (You can brush it with a little extra gluten free teriyaki about 10 minutes before it comes out for an even better glaze.)

Notes

  • If you don’t have gluten free bread crumbs, crushed gluten free cereal like Rice Chex will work.
  • I used unsweetened original almond milk to make it dairy-free.
