Gluten Free Ice Cream Sandwiches Recipe

  • 2 1/4 cups All-Purpose Gluten Free Flour, Or all purpose flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Butter, Softened
  • 3/4 cup Granulated Sugar
  • 3/4 cup Brown Sugar, Packed
  • 2 Eggs
  • 1 teaspoon Pure Vanilla Extract
  • 2 cups Semisweet Chocolate Chips
  • Vanilla Ice Cream
  • Muffin Top Pan
  • Aluminum Foil


  1. Preheat oven to 375°F.
  2. Combine all ingredients in a large mixing bowl or stand mixer, folding in the chocolate chips.
  3. Spray a muffin top pan with non-stick cooking spray, fill each muffin top mold with cookie dough. This typically will make 20 muffin top sized cookies.
  4. Bake for 10-12 minutes. Remove cookies and move to wire rack to cool.
  5. Once cookies are fully cooled, slather on the ice cream onto the bottom of one cookie, and then top with another.
  6. Wrap them up in foil and place in the freezer until you are ready to serve.
