Ingredients

  • 8 White Corn Tortillas
  • 1 pound Grilled Chicken Breast, Sliced
  • 1 cup Diced Tomatoes with Green Chilies
  • 1 cup Cooked Black Beans
  • 2 cups Queso Blanco
  • 1 4 ounce can Diced Green Chiles
  • 2 cups Shredded Mexican Cheese
  • 1/4 cup Chopped Green Onions

Directions

  1. Preheat the oven to 375°F.
  2. Warm up the corn tortillas for 20-30 seconds to make them pliable and avoid tearing.
  3. Spray a 9x13 baking dish with non-stick baking spray.
  4. Fill the tortillas with the chicken, diced tomatoes with chilies, and the black beans.
  5. Continue until the pan is full.
  6. Evenly pour the queso over the enchiladas.
  7. Top with the shredded cheese and green onions.
  8. Bake for 30 minutes or until the cheese has melted.
  9. Serve.
