Farro Risotto Recipe

Ingredients

  • 1 large Onion, chopped
  • 2 cloves Garlic, chopped
  • 4 cups Mushrooms, sliced
  • Salt, to taste
  • Black Pepper, to taste
  • 2 1/4 cups Vegetable Stock, or chicken stock
  • 1 cup Farro, 8 ounces
  • Fresh Parsley, for garnish

Directions

  1. In a medium pot bring 2 1/4 cups chicken or vegetable stock to boil, then add in 8 ounces of farro.
  2. Cover and simmer for 30 minutes.
  3. In a large soup pot sauté onions, garlic, mushrooms, salt and pepper until golden brown.
  4. Once farro has absorbed almost all of the liquid (30 minutes) add your mushrooms/onions, and toss.
  5. Serve topped with a sprinkle of fresh parsley.
