- 6 medium Potatoes, red or white, cooked and chilled
- 4 tablespoons Vegetable Oil, or shortening
- 1 pinch of Salt, to taste
- 1 pinch of Freshly Ground Black Pepper, to taste
Dice the cooked potatoes and set them aside.
Heat a heavy skillet over a medium heat and pour in the oil or shortening.
Once the oil is hot, add the diced potatoes, ensuring they are in a single layer.
Do not stir or turn them and cook until golden brown on one side.
Turn them and brown them on the other side.
Season with salt and pepper to taste, then serve whilst hot.
