Chocolate Avocado Mini Donuts Recipe

Ingredients

  • 1 1/2 cups All-Purpose Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 Avocado, Mashed, about 3/4 cup
  • 2 ounces Bittersweet Chocolate, Melted (or semisweet chocolate)
  • 2 teaspoons Pure Vanilla Extract
  • 1/2 cup Granulated Sugar
  • 1 cup Milk
  • 3/4 cup Powdered Sugar, Optional

Directions

  1. Preheat oven to 350°F and grease a mini donut pan.
  2. Stir together flour, cocoa powder, baking powder, and salt in a medium bowl.
  3. In a large bowl, mix together mashed avocado, melted chocolate, vanilla, and sugar until smooth.
  4. Stir dry ingredients and milk into avocado mixture until well incorporated.
  5. Put about 2 tablespoons of batter into each mini donut well and smooth tops.
  6. Bake for 10 minutes.
  7. Let cool in pan 1 minute, then remove donuts to a cooling rack. Clean pan of any stuck bits, grease again, and bake with remaining batter.
  8. If desired, when donuts are cooled, fill a paper or zip-top bag with powdered sugar, add donuts, and shake to coat.
