Blueberry Jelly Donut Holes Recipe

Ingredients

  • 1 cup All-Purpose Flour
  • 3/4 cup Granulated Sugar, divided
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 Egg
  • 1/4 cup Oil
  • 1/2 cup Sour Cream
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 cup Blueberry Preserves
  • 6 tablespoons Butter, melted
  • 4 teaspoons Cinnamon

Directions

  1. Preheat the oven to 400°F. Spray 2 – 12 count mini muffin tins with nonstick spray.
  2. Stir together the flour, 1/2 cup sugar, baking powder, baking soda, and salt.
  3. Create a well in the center and add the egg, oil, sour cream, and vanilla. Mix together gently.
  4. Spoon one teaspoon batter into the bottom of the prepared muffin tins.
  5. Place a small spoonful of the blueberry preserves in the center of the batter.
  6. Use the remaining batter to cover the preserves.
  7. Bake for 10 minutes.
  8. Let cool in the pans for 2 minutes before gently removing them and placing them on a wire rack to cool completely.
  9. Stir together the remaining sugar and cinnamon.
  10. Dip the donut holes in the melted butter and roll in the sugar mixture. Let set.
