Blueberry Flax Muffin Recipe

Ingredients

  • 1 1/4 cups Whole Wheat Flour
  • 1 cup Quick Oats
  • 1/4 cup Ground Flax Seed
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • pinch of Salt
  • 6 ounces Blueberry Nonfat Yogurts
  • 1/4 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1/2 cup Unsweetened Apple Sauce
  • 1 large Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1 1/2-2 cups Blueberries

Directions

  1. Preheat over to 375°F.
  2. In a medium bowl mix together the whole wheat flour, quick oats, flax seed meal, baking powder, baking soda, and salt.
  3. In a small bowl mix together yogurt, brown sugar, granulated sugar, unsweetened applesauce, egg, and vanilla extract.
  4. Add 1 1/2-2 cups blueberries (fresh or frozen) to the dry mix and stir to distribute evenly.
  5. Add the dry ingredient mixture to the wet ingredients. Stir until just incorporated, don't over-mix.
  6. Bake in greased muffin pan for 25 minutes.
