Barefoot Contessa Turkey Meatloaf

Ingredients

  • 3 cups Yellow Onion, chopped
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper
  • 1 teaspoon Fresh Thyme, or 1/2 tsp dried
  • 3/10 cup Worcestershire Sauce
  • 3/4 cup Chicken Stock
  • 1 1/2 teaspoons Tomato Paste
  • 5 pounds Ground Turkey Breast
  • 1 1/2 cups Dry Bread Crumbs
  • 3 Extra Large Eggs, beaten
  • 3/4 cup Ketchup

Directions

  1. Preheat oven to 325 degrees F.
  2. Warm the olive oil over a medium to low heat in a medium saute pan.
  3. Add the onions, olive oil, salt, pepper, and thyme and cook gently for around 15 minutes, until translucent, but not browned. 
  4. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. 
  5. Set aside and allow the mixture to cool to room temperature.
  6. In a large bowl, mix the ground turkey, bread crumbs and eggs with the onion mixture. 
  7. Using your hands, shape into a rectangular loaf on an ungreased sheet pan. 
  8. Evenly spread on the ketchup topping.
  9. To stop the top from cracking, place a pan of hot water in the oven under the meatloaf.
  10. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. 
  11. Delicious served hot, at room temperature, or cold in a sandwich.
