Ingredients

  • 1/2 cup Blueberries, Dried
  • 1/2 cup Dried Cranberries
  • 1/3 cup Prunes
  • 1/2 cup Walnuts
  • 2 cups Old Fashioned Oats
  • 2 cups Whole Wheat Flour, Or oat flour
  • 1/2 cup Brown Sugar, Packed
  • 10 tablespoons Unsalted Butter, Melted
  • 1/4 cup Honey
  • 1 teaspoon Baking Soda
  • 3 tablespoons Hot Water
  • 1 tablespoon Chia Seeds
  • 1/2 cup Shredded Coconut

Directions

  1. In a food processor, pulse the dried blueberries, cranberries, prunes, and walnuts until they are chopped to small bits.
  2. In a large bowl, combine oats, flour, and brown sugar.
  3. In a small bowl, combine melted butter and honey.
  4. In another small bowl, combine baking soda and hot water.
  5. Add the baking soda mixture to the butter mixture.
  6. Add the butter mixture to the dry ingredients and mix well.
  7. Add the chopped fruit and nuts, chia seeds, and shredded coconut. Mix well.
  8. Fill regular-sized muffin cups about halfway full with the mixture, pressing it down to flatten.
  9. Bake at 350°F for 9-10 minutes, or until edges are golden brown.
  10. Cool in the pans on wire racks.
