- 3 tablespoons Unsalted Butter
- 1/2 cup Brown Sugar
- 1/4 cup Apple Butter
- 1/2 teaspoon Salt
- 2 pounds Sweet Potato, Peeled and cut into 2 inch by 1/4 inch batons
Preheat the oven to 375°F.
Heat the butter, brown sugar, apple butter and salt in an oven-safe saucepan or Dutch oven over low heat, stirring just until the butter is melted and the liquid begins to bubble.
Add the sweet potatoes and toss just until all the veggies are coated with the apple butter mixture.
Cover with aluminum foil and bake at 375°F for 35-40 minutes, or until the sweet potatoes are tender. Serve warm.
