6 Cheese Mac & Cheese

Ingredients

  • 6 cups Elbow Macaroni, cooked
  • 1 stick Butter
  • 4 tablespoons Flour
  • 2 cups Half & Half
  • 1 cup Heavy Cream
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Smoked Paprika
  • 5 cups Cheese, shredded and divided - use a mix of Havarti, Parmesan, White Cheddar, Monterey Jack, Gouda, and Velveeta
  • 1/2 cup Sour Cream

Directions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Melt the butter in a large saucepan.
  3. Once the butter is melted, let it brown slightly to add a depth of flavor. Stir in the flour and cook for one minute, stirring constantly to avoid it sticking and burning.
  4. Pour in the half and half and the heavy cream and stir until it comes to a boil and starts to thicken.
  5. Stir in 4 cups of cheese, salt, pepper, garlic powder, smoked paprika and sour cream. Cook for 3 minutes on a low heat, stirring frequently until it forms a smooth sauce.
  6. Add in the cooked pasta and stir well.
  7. Transfer into a baking dish and top with a cup of cheese and a sprinkle of smoked paprika. Cook for 30-45 minutes until golden brown and bubbling.
