3-Ingredient Pumpkin Soup Recipe

Ingredients

  • 1 can Coconut Milk
  • 2 1/2 cups Pumpkin Puree
  • 2 teaspoons Green Curry Paste, Thai

Directions

  1. In a medium saucepan, whisk together all of the ingredients and bring to a boil.
  2. Reduce heat and simmer for 7 to 10 minutes until heated through and flavors are blended. Taste and adjust seasonings as needed. 

Notes

  • For kids, you can add a drizzle of honey or maple syrup. For grownups, serve as is or garnish with fresh cilantro.
