Killer Noms Wild Game Recipes and Techniques

 

Ingredients

  • 1 lb dried beans ( — pinto, black, red, or well rinsed canned beans )
  • 3 lb venison ( — diced (smaller than stew, about 1/2 inch))
  • 1/2 lbs chorizo ( — or chopped bacon)
  • 1 large onion, diced
  • 8 cloves garlic
  • 16 chilis mix of dried chilis. (3 or 4 types) ( — mild: Guajillo, Mulato (Poblano), Pasilla Negro, Ancho, Cascabel, New Mexican, Pasilla de Oaxaca. Hot: Chipotle Hotter: Cayenne, Japones, Habanero.)
  • 1/2 can Chipotles in adobo ( — Optional. Whole can for more heat.)
  • 1 tbsp chipotle powder ( — optional. Skip if using Chipotles in adobo.)
  • 2 tbsp smoked paprika
  • 2 tbsp ground cumin ( — toast and grind fresh if you have time)
  • 1 tbsp ground coriander
  • 3 tbsp tomato paste
  • 2 cups diced fresh tomatoes ( — canned is fine too (8 oz per cup).)
  • 1 cup coffee
  • 3 tbsp molasses
  • 1 qt Stock ( — venison or beef. Chicken in a pinch.)
  • 3 chunks glace de viande (red meat glaze) ( — optional. Preferably venison or beef.)
  • 2 tsp salt ( — More to taste at end only.)
