Vegan maki rolls are not only fun to do but they are also easy. While they feel like comfort food, they are healthy and plant-based. A perfect dish right?

Ingredients

  • 1 1/2 cup sushi rice
  • 2 1/3 cup water ((room temperature))
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup shiitake mushrooms
  • 1 clove garlic
  • 1 tablespoon shoyu
  • 1 teaspoon maple syrup
  • 1 teaspoon rice vinegar
  • 1 teaspoon spring onions
  • 2 springs fresh chives
  • 1/3 avocado
  • 1 teaspoon gomasio ((see recipe in the post))
  • 1 handful lamb's lettuce
  • 1/4 cucumber ((cut vertically))
  • dried chili flakes ((or sriracha))
  • 3 dried tomatoes
