Vegetarian Zucchini Noodle Pad Thai

Ingredients

  • 2 eggs
  • 1/4 cup cashews roasted, (you can substitute for unsalted peanuts)
  • 1/2 tbsp peanut oil or oil of choice (I used coconut oil)
  • 1 garlic clove minced
  • 1 shallot minced
  • 1 tbsp coconut flour
  • 1 tbsp cilantro roughly chopped , + whole cilantro leaves to garnish
  • 2 zucchinis medium
  • 1 tsp honey
  • 1 tbsp Thai chili garlic sauce
  • 1 tbsp hoisin sauce
  • 1/2 tbsp soy sauce low sodium (I used Little Soya)
  • 2 tbsp lime juice, freshly squeezed
