Vegetable curry is a very easy recipe you can prepare when you´re busy but you still want to eat something home-made, fresh and healthy.

Ingredients

  • 1 tbsp coconut oil
  • 1 cauliflower (cut into florets)
  • 1 sweet potato (cut into small chunks)
  • 1 onion
  • 4-5 dates
  • 2 tsp curry powder
  • 1/2 can coconut milk
  • 1/2 tsp cumin
  • 2 cups barley
  • pinch salt
  • pinch cayenne pepper
  • 1/2 cup vegetable broth
