Recipe for Vegan Fermented/Cured Pomelo Peel with Papaya. This is a vegan version of Cured Fermented Beef (Nem Chua), a popular street food in Vietnam. This recipe will use pomelo white peel and shredded green papaya.

Ingredients

  • 7.8 oz pomelo peel (white part only)
  • 1.75 oz shredded green papaya
  • 1 tsp roast rice powder
  • 1 tsp black pepper (crushed)
  • 2 tsp minced garlic
  • 2 tsp sugar
  • 1 tsp salt
  • 2 tsp vinegar
  • 2 tsp cooking oil
  • 5 garlic clove
  • Thai chili (thinly sliced)
  • Vietnamese coriander leaves
  • 1 drop red food coloring
  • 1 drop yellow food coloring
