Tropical Mahi-mahi and Risotta with a Coconut Cream Sauce

Ingredients

  • 4 Mahi-mahi filets
  • 3 Eggs beaten
  • 2 C Panko Bread Crumbs
  • 1/2 C Unsweetened Coconut Flakes
  • 1 tsp Smoked Paprika
  • 1 tsp Black Pepper
  • 15 oz Coconut Water
  • 3/4 C Calrose Rice
  • 1 Tb Pineapple Juice
  • 1/4 tsp Crushed Red Pepper
  • 1/2 Onion diced
  • 1/2 Orange Bell Pepper finely diced
  • 1/2 Red Bell Pepper finely diced
  • 1/4 C Macadamia nuts chopped
  • 1/4 C Parmesan Cheese shredded
  • 2 Tb Cilanto finely chopped
  • 13 oz Canned Coconut Milk
  • 1 Mango finely chopped
  • 2 Tb Crushed Pineapple
  • 2 Key Limes juiced
  • 1/4 tsp Black Pepper
  • 1/2 tsp Salt
