Three Bean Chipotle Chili

Can't Stay Out of the Kitchen

 

This fabulous chili recipe is great for tailgating parties. It combines ground beef with three kinds of beans, celery, onions, garlic, bell peppers, leeks, tomatoes and chipotle peppers in adobo sauce to give it a little zing! Gluten free, cleaning eating.

Ingredients

  • 2 lbs. 93% or 96% lean ground beef
  • 1 leek (green top removed)
  • 2 medium white onions (diced)
  • 2 ribs celery (diced)
  • 2 green bell peppers (diced)
  • 1/2 red bell pepper (diced)
  • 2 large cloves garlic (minced)
  • 2 15-oz. cans dark red kidney beans (rinsed and drained)
  • 1 15-oz. can black beans (rinsed and drained)
  • 1 15-oz. can pinto beans (rinsed and drained)
  • 1 15-oz. can tomato sauce
  • 1 15-oz. can crushed tomatoes (undrained)
  • 1 14.5-oz. can diced tomatoes with green chilies (undrained)
  • 1 14.5-oz. can petite diced tomatoes (undrained)
  • 1 tsp. chipotle peppers in adobo sauce
  • 1 1/2 tsp. pink Himalayan sea salt
  • 3/4 tsp. ground black pepper
  • 1 tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. oregano
  • 1 tbsp. parsley
  • cheddar cheese (parsley for garnish)
