Sweet Potato Cupcakes are a moist cupcake filled with coconut and pecans. A delicious ending to your holiday meal.

Ingredients

  • 1 stick salted butter, slightly softened
  • 1 1/2 cups brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup cooked mashed sweet potato
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup whole milk
  • 1 cup sweetened shredded coconut
  • 1 cup pecans, chopped
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 stick butter
  • 2 cups miniature marshmallows
