Tao of Stefan

 

This recipe is the main course of my healthy 2-course menu. I created a delicious surf and turf dish with a sweet potato purée and a guacamole.

Ingredients

  • 100 g topinambour (also known as Jerusalem artichoke)
  • 500 g sweet potato
  • 1 small onion
  • 2 cloves garlic
  • 1/4 tsp salt
  • 1/2 tsp pepper, freshly ground
  • 1/4 tsp cayenne pepper
  • 1/4 tsp turmeric, ground
  • 175 g salmon
  • 320 g chicken breast (I used corn-fed chicken)
  • 1 medium eggplant
  • 1 small zucchini
  • salt
  • pepper
  • olive oil (for cooking)
  • 1/2 avocado (ca. 125g)
  • 1 Tsp soya milk (unflavored)
  • 1 tsp lemon juice
  • 1/2 tsp lemon zestes (from an organic lemon)
  • salt
  • chili flakes
