Spicy Black bean salad bowl

Black beans cooked with fresh spices / peppers and garlic thyme roasted potatoes.

Ingredients

  • 3 Cups cooked black beans
  • 2 Cups Red bell pepper diced
  • 1 Cup Onions chopped
  • 1/4 Cup Chopped scallions
  • 1/2 Cup Chopped celery
  • 2 Tbsp minced garlic
  • 1 Tbsp Minced ginger
  • Salt to taste
  • 1 Small scotch bonnet or harbanero (Deseeded and minced (wear gloves))
  • 1 Tbsp olive oil
  • 3 Cloves of garlic Minced
  • 1 Tsp black pepper
  • 1 Tsp Kosher salt
  • 2 Sprigs Of fresh thyme
