Ingredients

  • 5-7 pounds pork shoulder, also called pork butt or boston butt
  • hickory wood chips or chunks
  • lump charcoal
  • 1 1/2 tablespoons paprika
  • 1 tablespoon red chili powder
  • 1/2 tablespoon brown sugar
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon dry mustard
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
