Ingredients

  • 3 tbsp Olive Oil (Plus extra for drizziling )
  • 1 each Onion (Medium, thinly sliced)
  • 1 each Red Bell Pepper (Large, stemmed, cored, thinly sliced)
  • 1 each Jalapeño (Stemmed, deseeded, thinly sliced)
  • 3 each Garlic Cloves (Thinly Sliced)
  • 1.5 tbsp Smoked Paprika
  • 2 tsp Cumin (Ground)
  • 28 oz Whole Peeled Tomatoes (Crushed)
  • Salt and Pepper (To taste)
  • 1 bunch CIlantro (Torn or roughly chopped)
  • 6 each Eggs
  • Bread or Pita (Optional, toasted )
