Seabass with Red Pepper and Cheese Sauce

Ingredients

  • 4 5 oz each Seabass Seasoned with salt and pepper.
  • 1 tbsp olive oil
  • 1 no. Red bell pepper Diced
  • 2 cloves garlic Chopped
  • 2 tbsp Onion Chopped
  • 1/2 cup Vegetable / Chicken stock
  • 1/2 tbsp Lemon Juice
  • 1/2 tsp Lemon Zest Grated
  • 1/2 tsp Sugar
  • Salt and Pepper To taste
  • 1 tbsp butter
  • 1 tbsp All purpose flour
  • 2 tbsp White wine
  • 3/4 cup Vegetable / Chicken stock Stock
  • 1/4 cup Cooking cream
  • 2 tbsp Asiago Grated
  • 1 tbsp Parmesan cheese Grated
  • Salt and Pepper To taste
  • 1/4 cup Red bell pepper Fine diced
  • 1/4 cup Mango Fine diced
  • 1/4 cup Pineapple Fine diced
  • 1 tbsp Shallots Fine diced
  • 1 tbsp Parsley Roughly chopped
  • 1/2 tbsp Lemon Juice Add a pinch of sugar to balance the sourness.
  • 1 tbsp olive oil
