Quinoa Stuffed Peppers Recipe

Quinoa Stuffed Peppers make enough for a crowd and make great leftovers. Just reheat and enjoy.

Ingredients

  • 8 large bell peppers, tops and seeds removed
  • 3 cups cooked quinoa
  • 1 cup corn kernels, fresh or canned
  • 1 cup canned petite diced tomatoes
  • 1/2 cup canned black beans, rinsed and drained
  • 1 4 ounce can green chiles
  • 1 cup shredded pepper jack cheese
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
