Pumpkin Soup (Vegan)

Ingredients

  • 1/2 cup olive oil
  • 1 sugar pumpkin four pounds
  • 1 onion yellow, large, chopped
  • 4 garlic clove pressed or minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon cloves
  • pinch cayenne pepper to taste, more if you like spicy
  • black pepper fresh, ground
  • 4 cups vegetable broth
  • 1/2 cup coconut milk full fat
  • 2 tablespoons 100% Maple Syrup 100% maple syrup is considered vegan
  • 1/4 cup pepitas optional as garnish (pepitas are green pumpkin seeds)
