This recipe is based on Oribasius (Medical Compilations 1:64), who was a Greek medical writer in the 4th century CE and the personal physician of the Roman emperor Julian the Apostate.

Ingredients

  • 2 citrons Etrog (Citron)
  • 2 cups Wine Vinegar
  • 1 tbsp Salt

Directions

  1. De-pith the citrons, by peeling them and cutting off the rind, so that only the pith remains. Cut the remaining citron pith into quarters...
