Killer Noms Wild Game Recipes and Techniques


Of course this works best with wild birds like turkey, pheasant or a big mess of quail. But you can substitute storebought poultry. Best is to use every bit


  • 8 lbs Poultry parts
  • 6 large yellow onions (quartered, skin on)
  • 1 head celery (coarsely chopped, with leaves)
  • 4 carrots (large, skin on, coarsely chopped)
  • 6 tbsp olive oil (approximate)
  • Salt & Pepper (To taste)
  • 4 bay leaves
  • 8 tbsp black pepper corns (4 tbsp = 1/4 cup)
  • 1 bunch flat leaf parsley
  • 12 sprigs fresh thyme (1 sprig fresh = 1/8 tsp powdered)
  • 6 chicken feet (optional (improves body). Blanch/skin them if they didn't come that way.)
