Try this Pomegranate Salad to mix up your usual, boring lunch box. Packed with vitamin K and C, plus lots of dietry fibre, it's a lunch box fave!

Ingredients

  • 1 handful washed spinach
  • 6 plum tomatoes (halved)
  • 1 spring onion (chopped)
  • 1 tbsp pomegranate seeds
  • 1 tbsp olive oil
  • 1/2 tsp sumac
  • 2 hard boiled eggs
