This hot and spicy chili is filled with 2 kinds of beans, ground beef seasoned with homemade taco seasoning, and lots of veggies. Gluten free and clean eating.
Ingredients
- 2 lbs. 93% or 96% lean ground beef (cooked and drained )
- 2 batches Homemade Taco Seasoning (or 2 packets taco seasoning )
- 1 large white or yellow onion (finely chopped)
- 3 cloves garlic (finely minced)
- 1 leek (green top removed, sliced)
- 2 ribs celery (diced)
- 2 14.5-oz. cans diced tomatoes with green chilies (undrained)
- 29 oz. can tomato sauce
- 1 large green bell pepper (chopped)
- 1 large orange bell pepper (chopped)
- 1 tbsp. parsley
- salt and pepper (to taste)
- 2 15-oz. cans white cannellini beans (rinsed and drained)
- 2 15-oz. cans pinto beans (rinsed and drained)
- cheddar and monterey jack cheeses (for garnish, if desired)
- sour cream (for garnish)
- green onions (sliced, for garnish, if desired)
- cilantro (chopped, for garnish)
