This is the ultimate comfort food potato soup, but with no dairy or gluten...an update of a classic recipe for those on a special diet.
- 8 slices Paleo bacon (or bacon of your choice)
- 8 large Russet potatos (diced)
- 1 large yellow onion (diced)
