Navy Bean Soup

Can't Stay Out of the Kitchen

 

This sumptuous stick-to-the-ribs soup recipe is perfect comfort food during the winter months. It's also a great way to use up leftover holiday ham. This easy recipe is made in the crockpot. Gluten free.

Ingredients

  • 1 ham bone (plus about 4 cups chopped ham )
  • 1 1/2 qts. ham broth ((if you do not have ham broth, substitute vegetable broth))
  • 16 oz. dry navy beans
  • 1 large onion (chopped)
  • 1 leek (green top removed, diced)
  • 2 ribs celery (diced)
  • 3 carrots (thinly sliced)
  • 1 tsp. sea salt
  • 3/4 tsp. ground black pepper
  • 2 cloves garlic (minced)
  • 1 tsp. dried thyme
  • 1 tsp. dried parsley
  • 2 bay leaves
  • 1/2 tsp. liquid smoke
