Mexican Style Fusilli | Gluten Free Pasta Dish

This simple dish comes together in just 30 minutes! Perfect for those evenings that tend to just fly by.  


  • 1 tablespoon olive oil
  • 1 bud garlic (crushed and finely chopped)
  • 1 teaspoon Cumin seeds
  • 1 large red pepper (diced)
  • 2 large Tomatoes (ripe or over ripe)
  • 1 can Diced tomatoes
  • 1/2 cup Vegetable Broth
  • 1 cup Black Eyed Peas (or black beans (about 1/2 can))
  • 1 cup Corn Kernals
  • 1 cup Cilantro, fresh (finely chopped)
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Honey (local if available)
  • 1 box Fusilli, Gluten Free (I use Catelli brand)
  • 1/2 cup Cilantro (coarsely chopped)
  • Quesada (grated)
