Lemon Poppy Seed Muffins Recipe

These lemon poppy seed muffins are quick and easy and make the perfect breakfast or snack. They also freeze well for easy to grab snacks on the go!


  • 2 tablespoons lemon zest, (zest from two lemons)
  • 1/2 cup granulated sugar, plus 1 tablespoon
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons poppy seeds
  • 4 tablespoons lemon juice, (juice from two lemons)
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted and cooled
  • 1/4 cup canola oil
  • 1 cup milk
  • 1 1/2 teaspoons pure vanilla extract
  • coarse sugar, or turbinado sugar, for sprinkling (optional)
