  • 2 cups sweetened coconut flakes, toasted (heaping cups)
  • 10 ounces lemon curd, (1 jar)
  • 8 large egg whites
  • 1 1/2 cups granulated sugar
  • 2 1/4 cups unsalted butter
  • 1 1/2 teaspoons coconut extract
