Ingredients

  • 1 1/2 pounds lamb (leg or shoulder, cut into 2-inch chunks)
  • 1 white onion (sliced (or substitute yellow onion if so desired))
  • 2 cloves garlic (minced)
  • 1/2 cup mixed herbs (chopped (I prefer a mix of rosemary, mint, and thyme))
  • 1/4 cup lemon juice (fresh)
  • 1 cup olive oil
  • salt (to taste)
  • 1 tablespoon duck fat (or other fat of choice)
  • 1 cucumber
  • 2 cups yogurt (full-fat)
  • 2 cloves garlic (minced)
  • 2 tablespoons lemon juice (fresh squeezed)
  • 1 teaspoon lemon zest (freshly grated)
  • 1/4 cup olive oil
  • 2 tablespoons dill (fresh chopped)
  • salt (to taste)
  • pepper (to taste)
