Many of us don't like to eat Bitter Gourd ad It's taste bitter but its filled with lots of nutritional values. There are so many recipes of Bitter gourd in odisha like Kalara Alu Bhaja, Gota Kalara Bhaja, Kalar Chips and Kalara Besar. We use mustard paste (we call it Besara) in most of the dishes. Today will share you the recipe of Kalara Besara. It's a very simple recipe & has a unique taste. In Odisha, It's a side dish served with steamed rice. I remember in my native place people use Bamboo Shoot & white Chana (Dhala Buta) in this recipe But it's totally optional as some of the people don't like the smell of Bamboo Shoots. Ingredients

  • 1 Tbsp Mustard seeds
  • 7-8 garlic
  • 2-3 Red chilli
  • Water as required
  • 2 Medium Size Bitter Gourd
  • 3 Medium Size Tomato
  • 2 Tbsp White Chana ( Buta ) ((Boiled))
  • 2-3 garlic
  • 1 Red chilli
  • 1/4 Tsp Turmeric powder
  • 2 Tbsp Mustard Oil
  • 1/2 Tsp Panchphoran
  • Salt to Taste
  • Water as required
