Indian Butter Chicken Recipe

Indian butter chicken made just for two - but easily doubled for four or six. It's so good, you're going to want leftovers for sure!

Ingredients

  • 3/4 cup white rice
  • 1 1/2 cups water
  • 2 teaspoons canola oil, or any neutral-flavored oil like grape seed
  • 1 small onion, diced
  • 2 cloves garlic, chopped
  • 1 tablespoon fresh ginger, grated
  • 1 jalapeño, small and red, chopped
  • 1 1/2 teaspoons garam masala
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground coriander
  • 1 8 ounce can tomato sauce
  • 3/4 cup chicken broth
  • 1/2 teaspoon salt
  • coarse ground black pepper
  • 2 boneless skinless chicken breasts, diced (6 ounces each)
  • 1/3 cup heavy cream
  • 2 tablespoons unsalted butter
