  • 2 teaspoons extra virgin olive oil
  • 2 cloves garlic, chopped
  • 2 tablespoons diced onion
  • 3 cups broccoli
  • 8 ounces baby spinach leaves
  • 2 parsnips, peeled, cored and chopped
  • 2 ribs celery, trimmed and chopped
  • 1 handful fresh parsley, roughly chopped
  • 1 pinch of sea salt, to taste
  • 1 pinch of freshly ground black pepper, to taste
  • 1 tablespoon lime juice, or to taste
  • 2 tablespoons dry lentils, or other plant-based protein (see notes above)
  • 1/2 cup sweet potato, cooked and cubed (optional)
