Ingredients
- 2 teaspoons extra virgin olive oil
- 2 cloves garlic, chopped
- 2 tablespoons diced onion
- 3 cups broccoli
- 8 ounces baby spinach leaves
- 2 parsnips, peeled, cored and chopped
- 2 ribs celery, trimmed and chopped
- 1 handful fresh parsley, roughly chopped
- 1 pinch of sea salt, to taste
- 1 pinch of freshly ground black pepper, to taste
- 1 tablespoon lime juice, or to taste
- 2 tablespoons dry lentils, or other plant-based protein (see notes above)
- 1/2 cup sweet potato, cooked and cubed (optional)
