Honey Roasted Pears with Edamame Over Coconut Rice

Could I have made that title longer? Actually that's the shortened one! This dish has so much happening I had trouble naming it :) Personally I adore pears


  • 4 large Pears (If the pears are small I do 1 per person, if large 1/2 per person)
  • 1 teaspoon Honey
  • 1/2 Lime, juiced
  • 1 tablespoon Coconut Oil
  • 1 cup Brown Rice, cooked
  • 1/2 head Chinese Cabbage, finely sliced (or savoy)
  • 1 cup Edamame (shelled)
  • Salt and Pepper to taste
  • 1 can coconut milk
  • 1 teaspoon Coriander, ground
  • 1 teaspoon Ginger, ground
  • 1/2 teaspoon Lemon Grass, ground (If using fresh lemon grass thinly slice and cook in coconut milk for 10-15 minutes until flavors have been released then strain before adding in the rest of the ingredients)
