Ham and Scalloped Sweet Potatoes

Can't Stay Out of the Kitchen

 

This fantastic casserole is the perfect way to use up leftover ham from the holidays. Savory and sumptuous, this pork entree is comfort food at its best! Gluten free.

Ingredients

  • 4 small to medium sweet potatoes (peeled and sliced thinly )
  • 3-4 cups cooked ham (diced (I used four cups))
  • 1 sweet onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (chopped)
  • 1 leek (green top removed, diced (optional) )
  • 1 stick unsalted butter ((8 tablespoons))
  • 1/2 cup gluten free flour ((or all-purpose flour))
  • 4 cups heavy whipping cream (or half-and-half (or any combination of the two) )
  • 1 tbsp. dried parsley
  • 1 tsp. dried marjoram
  • 1 tsp. dried thyme
  • 1 1/2 tsp. pink Himalayan sea salt
  • 3/4 tsp. ground black pepper
  • sliced green onions (for garnish, if desired)
