Gluten Free Peach Cobbler

This is a delightful twist on a classic southern favorite. A scrumptious peach filling spiced up with cinnamon and nutmeg is topped with a gluten free topping and sprinkled with sugar. It makes a nice crunchy crust and is a great gluten free dessert, especially when it's served ala mode!

Ingredients

  • 8 cups peaches (peeled and diced )
  • 1 tsp. lemon juice
  • 1 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 2 tsp. cornstarch
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 cups Pamela's gluten free all-purpose flour (or other gluten free flour )
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 sticks unsalted butter (cold, (3/4 cup or 12 tbsp.))
  • 1/2 cup boiling water
  • 3 tbsp. granulated sugar
