Gluten Free Mixed Berry Streusel Muffins

These luscious muffins are filled with strawberries, raspberries, blueberries, raspberries, mixed berry Greek yogurt and they have a streusel topping and a vanilla cream frosting. These muffins are great for holiday breakfasts and are gluten free.

Ingredients

  • 1/3 cup brown sugar (packed)
  • 1 tbsp. granulated sugar
  • 1/4 cup unsalted butter (melted)
  • 2/3 cup Pamela’s Gluten Free Pancake and Baking Mix
  • 1/2 cup chopped walnuts
  • 1/2 cup unsalted butter (softened )
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 5.3 oz. container Yoplait Mixed Berry Greek yogurt
  • 2 tsp. vanilla extract
  • 2 1/2 cups Pamela's gluten free baking and pancake mix
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3 tbsp. heavy whipping cream (or half-and-half)
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh blackberries
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh diced strawberries
  • 1 cup confectioners' sugar
  • 3-4 tbsp. heavy whipping cream
  • 1/2 tsp. vanilla extract
