  • 1 1/2 teaspoons xanthan gum, omit if your flour blend already contains it
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 2 tablespoons poppy seeds
  • 1 cup granulated sugar
  • lemon zest, from 1 lemon
  • 1 cup coconut milk, from a carton
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1/4 cup lemon juice
  • 1 teaspoon pure vanilla extract
  • 3/4 cup powdered sugar
  • 2 teaspoons lemon juice
  • 1/2 teaspoon pure vanilla extract
  • water, optional, to reach desired thickness
