Fig muffins stuffed with goodness. Matched with lemon, they can't be beat.

Ingredients

  • 3/4 cup cream cheese, softened
  • 2 tablespoons honey
  • 2 tablespoons lemon zest, freshly grated
  • 1 1/2 teaspoons pure vanilla extract, divided
  • 2 cups white whole wheat flour, or spelt flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 large egg white
  • 3/4 cup brown sugar, packed
  • 1 cup buttermilk, nonfat
  • 1/3 cup extra virgin olive oil
  • 1 1/4 cups dried figs, chopped
